Picadillo in Sweet Pumpkin

I was given this Picadillo recipe by a dear Cuban expat friend of mine. As normal, I would take recipe and try to make it my own without disrespecting the originals. The basic ingredients go like thishmm

1/2 kg ground beef
1 onion
1/2 green pepper
1/2 red pepper
2-3 cloves garlic
About 8oz tomato sauce
3/4 bottle green olives stuffed w/pimientos
1/2 cup raisins
1 tablespoon ground cumin
1 tablespoon dried mixed herbs
Salt, pepper to taste
1 small pumpkin cut in half
Cheese to go on top

In a bowl, mix the ground beef with cumin, mixed herbs, raisins and olives.
Add a little salt and pepper to the beef.
In a frying pan, heat 3 tablespoon of olive oil.
Then put in the fine chopped onion, garlic, peppers and fry for about 1 minute.
Put in the beef mixture and add the tomato sauce then fry for about 7 mins in medium heat.
De-pit and wash the pumpkin. Cut slightly the bottom of the pumpkin for it to stand and not roll off. Preheat oven at 180celcius and put pumpkin in for 10mins.
Take out the pumpkin and pour beef mixture until almost overflowing.
The 500g beef would fit into at least both halved pumpkins.
Cook in the oven for another 25mins.
Lastly add the cheese on top when almost done (abt the 24th min)

The taste of the spiced up beef, the sweet pumpkin with the sweet natural juice topped with the milky bodied taste of the cheese is divine. It feels like a sunny summers day in Catalunya Spain whilst watching the F1 race. Please have a go! Happy days!

Thank you for this recipe , I might try this but possibly using a vegetarian rice or quinoa  filling as I don't eat meat .
We also watch F1 and hope To go to a race again this year .thumbsup

That filling is a great idea. Originally it was supposed to be with fake ground beef. As i couldn't find it here, i substituted it with minced meat instead. Do whichever you fancy and interest you the most. Recipes are just guides.
