THE HOLIDAY
Three days of clam-digging and wine tasting, visits to local artisan producers and browsing the Sunday flea market for bargains. Plus there’ll be a series of cooking classes with Andy, Kevin and notable local chefs, where the secrets of local cuisine will be revealed.

When? Thursday 14 November to Sunday 17 November 2013.

Where? Olhão, Eastern Algarve, staying at the new nine-room boutique hotel, Convento (conventoolhao.com).

How much? £475 per person. Price includes three nights accommodation, transfers to and from Faro airport, and all meals and classes. Excludes flights to and from Faro airport.

DRAFT ITINERARY
14 November
Arrive in Olhão in time for a late supper at Carlos e Helena. Enjoy garlic coriander clams, grilled scabbard fish and fresh blood oranges.

15 November
Early start for clamming with Papa Leite (tides permitting). Breakfast of ‘tosts’ and hot coffee at Lazaro, followed by shopping in the markets. First cooking class at Convento, then lunch of the clams we’ve just picked, cooked with Alentejan pork. Afternoon visit to Detlef von Rosen at the organic Monterosa Olive Oil groves in Moncarapacho. Tutored tasting of just-pressed oils with Detlef. Return to Convento for the second class (how to cook some of the local seafood, plus paella. Japanese sashimi techniques with tuna whisperer Shinji and supper prepared with Detlef’s oils.

16 November
Market Day! Shopping for ingredients, plus hot ‘farturas’ and breakfast on the front. Third class: cephalopods – the culinary secrets of octopus, cuttlefish and squid, with lunch. Visit by José Mota da Capitao of boutique winery Herdade do Comporta for a tutored tasting of his stunning Alentejan wines. Dinner of wild boar and mountain meats cooked by Maria Jose at rural Cantina do Serra, high above Santa Caterina.

17 November
Fresh breakfast baking from Filipe Martins at Kubidoce. Visit to the flea market (weather and time permitting) Late-afternoon flight.
