Wicked Welsh rarebit

Ingredients:
  • 2 thick slices of white bread
  • 1 free-range egg yolk
  • 3 heaped tablespoons creme fraiche
  • 1/2 teaspoon on mustard powder
  • Sea salt and freshly ground black pepper
  • 50g mature Cheddar cheese, freshly grated
  • 2 tablespoons onion marmalade or chilli jam
  • Worcestershire sauce
Method:

Toast the bread on both sides in the hot oven until golden, then transfer to a baking tray. Meanwhile, mix the egg and crème fraÎche together, then add the mustard powder and mix again. Season with salt and pepper, then stir through the grated cheese. Spread each slice of bread with a good layer of onion marmalade or chilli jam, right up to the edges. Divide the cheese mixture between the slices and spread this out to the edges also. Pop the slices back in the oven for about 5 minutes and bake until the cheese is browned and bubbling. Keep an eye on them and rotate the tray for even cooking. Cut a criss-cross pattern on top of the cheese with a knife and drizzle a bit of Worcestershire sauce into it for an extra kick. Delicious served with some dressed salad leaves.
