last night on late night TV (the food network); Ciao America. The show was on fresh made cheese. One of my all time favourite subjects yikes)....

It showed Mario visiting a friend in Cali....They made these cheese and bread skewers to die for.

slices of a french baguette
pieces of fresh mozzarella
fresh bay leaves
skewers made of rosemary

a bath of:
anchovies
garlic
freshly ground black pepper
good olive oil
high grade butter

Make rosemary skewers. Take a slice of a french baguette pierce it right through the middle with the rosemary skewer. Do the same with a piece of mozzarella, then a fresh bay leaf.......then repeat and alternate again. Pierce with another rosemary skewer on the opposite side to seal both ends, if you will. Place directly on grill. The cheese will start to melt and the bread will toast to perfection.
After the skewer has completed cooking, douse with a bath of anchovies and garlic that have been bashed in a mortar and pestle, adding freshly ground black pepper and olive oil. Place in a small pan and warm up, adding butter to finish. Oh my goodness, what a heavenly delight. Did this today for a snack........so good.

They also showed how to incorporate ricotta cheese in pancakes and made these in incredible eggplant rolletinni(sp?) with fresh mozzarella and a an awesome tomato sauce.

Now I'm hungry again after seeing all the wonderful dishes served up by the restaurant!!!

Lots of twists and interesting combis. The roasted scallops with a vanilla vinaigrette especially sounded yummy,and warm butterscotch brownie...mmmmhhh!!!!

I am thinking of taking the conventional brownie up a notch,yours sounds good. I might add some dulche de leche swirls maybe (cutting down on the sugar in the batter would be good at this point!!) and uhmmm...what else would you suggest? I actually did a Christmas brownie for my friend,it was brownies flecked with peppermint candy and caramelised almonds...  big_smile

Your tweak on the brownies sound great. The dulce de leche swirls sound fantastic. Maybe, you can try adding some Macademia nuts (they have a softer texture than most nuts, and that delicious buttery flavour to boot). You can also possible try adding some pieces of candied ginger, that would also kick it up to a different level. With which and however you decide, let me know how it turns out. Take care!

The dulche de leche and Macadamia combi sounds smashing!!! I am gonna give it a shot tomorrow.

How about...espresso and dulche de leche...

Or...candied orange zest and candied ginger in a blonde brownie???

The combo of both ginger and orange sound awesome as well.
How did the macademia nut and dulce de leche turn out?
