Jamie Cooks Italy Specials: Acqua Pazza
On last night’s Jamie Cooks Italy, Jamie and Gennaro paid a visit to the island of Procida – an island famed for its colour and beauty, just off the coast of Naples. Procida is best known for its seafood, and all the locals head there for the best seafood in the bay.
While at the harbour, Jamie and Gennaro met Nonno Francesco who was whipping up the day’s centrepiece – an incredible acqua pazza. It’s the perfect island fish dish, and that’s why we’re serving it on our Jamie Cooks Italy menu for the rest of August.
We cook whole sea bream with “crazy water” – the accompanying broth, and the real star of the show here. Packed with fennel, cherry tomatoes, white white, Calabrian chilli, Leccino olives and fresh herbs, it’s vibrant in both colour and flavour.
This Neopolitan classic is all about simple, fragrant ingredients, and a love of quality seafood. Just don’t be afraid to ask for a chunk of bread to mop up that irresistible sauce!
