JAMIE COOKS ITALY SPECIALS: BEEF CHEEK PAPPARDELLE
Did you catch Jamie and Gennaro meeting Nonna Miriam on Channel 4 this week? What an absolute legend she is, famous in Tuscany for her proper farmhouse cooking. She had a thing or two to teach Jamie about her signature dish Stracotto – a beautifully slow-cooked beef ragù – inspiring him to create the Beef cheek pappardelle that’s on our new Jamie Cooks Italy specials menu, and soon to be a staple on our new autumn menu.
Nonna Miriam’s cooking is a tribute to using the whole of the animal – with no need for a “posh joint.” She told Jamie how she shows the cheaper, less popular cuts of meat some love and turns them into melt-in-your-mouth centrepieces.
For his pasta, Jamie heroes the beef cheek – one of the most succulent cuts of meat. It’s slow cooked in an outrageously good oxtail and red wine ragù, and served with our freshly made pappardelle pasta – “Like ribbons of silk!” If you love spaghetti Bolognese then, trust us, this dish takes it to a whole new level…
