Tonight’s the night! The first episode of Jamie’s new channel 4 TV series, Jamie Cooks Italy, starts at 8.30pm. Tune in to catch all the behind the scenes action from Jamie’s brand new book, and see Jamie cooking up his Salina chicken pot roast – inspired by the wonderful Nonna Marina – then come in and try it for yourself! 

Nonna Marina is the head and heart of one of the largest families on the Aeolian Islands, and she cooks up a family feast every week using the freshest homegrown ingredients from her backyard. Her style of cooking is all about humble, no-nonsense dishes that are packed full of island flavours – and that’s what’s inspired Jamie’s Salina chicken.

This is a big, bold pot roast that makes the most of the island’s signature ingredients – pine nuts and capers – alongside tomatoes and fresh basil for a full, fragrant sauce. The aubergine is cut into hearty chunks and slow cooked with our free-range Creedy Carver chicken, until both are succulent and buttery. It’s all served up with a lemony couscous that’s the perfect partner for this rich sauce – it’s a sweet and sour vibe that comes straight from Nonna Marina, and is sure to serenade you with the flavours of the Aeolian islands.
