Sweet and delicate sustainably sourced scallops are pan fried with a squeeze of lemon until tender and melting. We serve them on our delicious Italian vignole – a recipe you might recognise from Jamie’s Italy!
Sustainably sourced scallops, Roman pea stew, smoky pancetta & herbs
Vignole is a traditional Roman vegetable stew – packed with fresh green veg like peas, asparagus, broad beans, baby spinach and baby leeks, and slow cooked with smoky pancetta. The vibrant sweetness of the vegetables contrasts beautifully with the rich pancetta, and a handful of chopped fresh mint brings it all together.
Topped with our perfectly cooked scallops and some sweet pea shoots – this really is summer in a bowl!
