Squid, prawns, mussels & scallops, sweet cherry tomatoes, white wine, Calabrian chilli, capers & parsley
Last month, we gave you our Seafood linguine as a weekly special – and now it’s on the a la carte menu! It’s just perfect for the summer season – celebrating beautiful, sustainable seafood. We’ve teamed fresh prawns, squid and scallops with our linguine that’s handmade every day in the restaurants using free-range eggs and semolina, for colour and bite. This dish is made with such fresh ingredients that it only takes a minute to cook. Fragrant garlic is added to the pan with the prawns after they’ve started to sizzle, along with salty sweet capers, Calabrian chilli – to give a burst of heat – and a tablespoon of anchovy, which melts away leaving a delicious umami flavour. Halved red and yellow cherry tomatoes are added to the pan, as well as a splash of white wine that emulsifies with the oil to create a beautiful creamy sauce. The scallops are cooked for the last few seconds to keep them tender, and it’s all finished off with a sprinkle of chopped parsley. A seafood-lover’s dream!
