The clue’s in the name here – Jamie was inspired by Nonna Rosanna, who's been buying and cooking fish in the markets of Sicily for the last 50 years. This bowl of sweet and sour pasta is an absolute joy. Nonna Rosanna taught Jamie and Gennaro the trick of washing the onions before they're cooked – which brings out their natural sweetness. Tuna is one of Sicily's favourite ingredients, and it’s at its best with our fresh sustainable prawns.
