  • 6 scotch bonnet peppers
  • 4 cloves of garlic
  • A little splash of red wine vinegar
  • Splash of orange / tropical fruit juice
  • Salt & pepper
  • Tbsp. of cornflour
  • 1 mango / papaya / guava
  • All spice
  • 1 tbsp of brown sugar
  • Spring onions
Put whole scotch bonnets into a large roasting tray with garlic cloves and roast in the oven on 180c for 15 – 20 mins slowly until lightly coloured with a little oil.

Remove the chilli seeds if you don't like it as hot.

Once cooked, place in a pan with red wine vinegar, fruit juice, seasoning, cornflour, the fruit, all spice, brown sugar and spring onions. Cook down a little and the cornflour should help it to thicken.

Blitz in a food processor and serve with daddy ribs.

Method
