  • 2kg rope-grown mussels
  • 2 chillis, mix up the colours
  • thumb-size piece of ginger
  • 1 garlic clove
  • 6 rashers of smoked bacon
  • 200ml creme friache
  • pinch o salt
  • handful of pink peppercorns
  • handful of fresh basil
  • 50g butter
  • 75 ml good dry cider
  • 1 pack of bruschetta breads
