1 Heat a sake, water, mirin, soy sauce sugar and ginger in a large pan until it is boiled. 2 Place the mebaru fish into the pan and put on a drop lid, then bring to simmer for about 10-15 mimutes. 3 Place the mebaru fish on the plate and pour the broth over it. 4 Decorate the boiled daikon stem leave in the middle of the mebaru fish and a yuzu skin on top. In my country, simmering fish with above ingredients (for the broth) are very common recipe for various kinds of fish. Some use dashi soup and use only mirin instead of sugar to cook it. This recipe was simply passed me on from my mum :). loveCream:)
