  • 1 kg of beef stew meat 1 onion 1 stalk of celery 1 carrot 2 cloves of garlic, parsley, sage, rosemary, lemon peel , 6 eggs 2 slices of dry bread, parmesan ,1 cup red wine 1 can of tomatoes extra virgin olive oil Salt and pepper
Chop the celery, carrot, onion, garlic, parsley, sage, rosemary
and lemon peel. Saute the chopped vegetables in
6 tablespoons of olive oil. Add the meat and brown well with
salt and pepper. Pour the wine and let it evaporate and then
add the tomatoes. Cover and cook on low heat for at least 2
hours. Let the meat cool, and chop in a food processor with
2 eggs, dry bread soaked 2 handfuls of Parmesan cheese and
nutmeg and season with salt and pepper if necessary. With
this mixture make the meatballs, flour and fry in hot oil. When
they are browned drain the excess oil in the pan and add the
remaining 4 eggs, beaten with salt and pepper. Make so a
meatbal\\\'ls omelet . Buon Appetito

These meatballs are eaten in Florence on the berlingaccio Day (Carnival Thursday)the day before Ash Wednesday the beginning of Lent in which you could not eat meat for 40 days
but now few families follow this tradition , mine is one of these.Try them they are very good even if not cook them on the berlingaccio\\\'s day

Method
