SOURCING: ITALY / UK
Our ingredients are sourced from the very best producers in Italy and the UK. Here are just a few examples...
SALUMI
Our wonderful dry-cured meat comes from a family-run company, based on the outskirts of Milan. Since 1911, this artisan producer has been producing award-winning, high-quality, salami created on the teachings of the Milanese masters of pork butchery. The founder, Enzechiello Levoni stated that he would compromise on quality when pigs grew wings, which is why, nearly a century later the company's logo is still a pig with wings... a symbol of the family's dedication to uncompromising excellence.
FREE RANGE CHICKEN
Our chicken is Devonshire Red – a lively, robust and slow growing breed reared naturally on family farms in the West Country. These free range chickens roam in grassy, tree shaded paddocks during daylight hours, doing what comes naturally to chickens in a healthy, stress free environment
SQUID
Our squid is caught by a day boat on the South Coast of England so this means it’s widely available, particularly during the UK summer, and sustainable. The squid is net caught – so smaller with tender flesh - rather than line or jig caught which lands larger fish with tough flesh. The squid is hand cut and prepared in-house by skilled fish and seafood professionals.
