Jamie Cooks Italy Specials: Summer Orecchiette
Did you catch the second episode of Jamie’s new show Jamie Cooks Italy on Channel 4? If you did, you’ll have seen Jamie and Nonna Cinzia making and hand shaping orecchiette pasta shells in Puglia. Nonna Cinzia makes fresh pasta every day with her friends, and combines it with beautiful seasonal sauces cooked up with ingredients from their veg patch – an ethos we couldn’t be more behind!
We’re serving up Nonna Cinzia’s incredible orecchiette recipe in Jamie’s Italian – pasta shells with broad beans, sweet cherry tomatoes, basil, aged pecorino & extra virgin olive oil. It’s the perfect way to showcase Nonna Cinzia’s style of cooking – simple, beautiful ingredients made super special.
The cup-like shape of the pasta – orecchiette means “little ears” – is the perfect partner for the chunky veg – young broad beans and sweet, juicy tomatoes. A sprinkle of Italian pecorino adds a delicious salty contrast to this vibrant sauce.
