INTRODUCING JAMIE’S ’NDUJA CASARECCE

Jamie's here to bring you some incredible new specials straight from the Jamie’s Italian test kitchen.

This week Jamie’s created a brand new dish that we know you’re going to love – ’Nduja casarecce – featuring our signature freshly made pasta in a new and incredible way.

This dish is comfort food at its best, and celebrates one of Southern Italy’s favourite leafy greens – cime di rapa. Cime di rapa is a sprouting broccoli with a slightly bitter flavour that contrasts deliciously with the sweet tomato and salty black olives in this recipe – Italians go crazy for it.

We pair up the cime di rapa with our favourite ’nduja – a super-soft and spicy salami that’s originally from Calabria. Our friends at Cobble Lane Charcuterie make our British version for us using higher-welfare meat.

We extrude fresh pasta in the restaurants every day, using bronze dye heads which gives the pasta a rough texture to help sauce stick to it. You can read more about our fresh pasta here.

Once we’ve got our fresh pasta sorted, we start this dish by heating up the ’nduja with olive oil – it melts beautifully as it heats up. As the oil changes colour we add garlic, olives and a little chilli to let them release flavour.

Then in goes the cime di rapa and halved cherry tomatoes, which are cooked in the fragrant oil until tender. The twisted pasta really takes on the sauce, and a sprinkle of the best shaved Parmesan brings all of these simple, hearty flavours together - making what, we truly believe, is one of the most extra special ‘specials’ Jamie’s created.
