Jamie’s cooking up a brand new sharing special that’s coming to restaurants across the UK from 25 June–1 July.

Pork tomahawk – for two to share £13.50 per person
Chargrilled Dingley Dell pork chop with slow-roasted fennel, black olive salsa & crispy crackling

This dish is perfect for two to share, and is full of rich, slow-roasted flavours. The real focus of the dish is our beautiful higher-welfare pork tomahawk – a thick French-trimmed cut of meat provided for us by the Hayward brothers from their farm, Dingley Dell, in Suffolk.

The pork is marinated overnight in smashed garlic, lemon zest, thyme and olive oil – infusing the meat with zesty flavour. It’s then bar-marked and roasted to give it a juicy, succulent texture that goes perfectly with our melt-in-the-mouth fennel.

We finish it off with a spoonful of freshly made black olive salsa, with just a touch of chilli to give a warm hum. The crowning glory – our deliciously crisp crackling – might make it difficult to share, after all.
