This is a quick fix pud that you can knock together in just 45 seconds. It's a nice little recipe to have up your sleeve if you need to rustle something up with no notice. It's also a fantastic way of bringing back to life any leftover puds you've got sitting in the fridge.

Method

You can use cups, glasses or little bowls to make this pud. Spoon or crumble your leftover pudding into the bottom of each, then top with the scoop of ice cream and pour over the shot of espresso. If you're doing this for kids, you could use decaffeinated coffee. Bash and crunch up your amaretti biscuits, then scatter one or two over the top of each pud and tuck in!

Buying sustainably sourced fish means buying fish that has been caught without endangering the levels of fish stocks and with the protection of the environment in mind. Wild fish caught in areas where stocks are plentiful are sustainably sourced, as are farmed fish that are reared on farms proven to cause no harm to surrounding seas and shores.

When buying either wild or farmed fish, ask whether it is sustainably sourced. If you're unable to obtain this information, don't be afraid to shop elsewhere – only by shopping sustainably can we be sure that the fantastic selection of fish we enjoy today will be around for future generations.
