Ingredients

  • 200 g gluten-free flour
  • 100 g ground almonds
  • 1 pinch of salt
  • 2 tsp gluten-free baking powder
  • 1/2 tsp ground cardamom
  • 5 large free-range eggs
  • 2 tbsp vegetable oil
  • 200 g sugar
  • 2 gala apples , cored and chopped

Method

  1. Recipe by Cara Hobday
  2. Preheat the oven to 180C/gas 4 and line two 12-hole muffin trays with cupcake cases.
  3. Combine the dry ingredients in a bowl.
  4. Beat the eggs, vegetable oil and sugar together till light and fluffy. Beat in the dry ingredients then stir in the apple. Spoon the batter into the cupcake cases and bake for 20–30 minutes till firm and lightly golden.
