Yellow split peas are the secret of incredible comforting texture here – packed with protein and fibre, they also give us a hit of the B-vitamin thiamin, so our hearts can function properly.
Recipe From
6 cloves of garlic
4cm piece of ginger
2 fresh red chillies
olive oil
4 teaspoons black mustard seeds
1 cinnamon stick
2 onions
1 head of cauliflower
2 heaped teaspoons curry powder
1 ripe mango
1.5 litres veg stock
1 x 400g tin of plum tomatoes
500g dried yellow split peas
8 wholemeal chapattis
8 tablespoons natural yoghurt
1 bunch of fresh coriander (30g)
Batch up any extra portions, and freeze in labelled sandwich bags for a rainy day.
