300g mixed-colour raw baby beets
1 tablespoon balsamic vinegar
2 teaspoons jarred grated horseradish
4 heaped tablespoons fat-free natural yoghurt
8 fresh sardine fillets, skin on and scaled, from sustainable sources
extra virgin olive oil
1 lemon
4 sprigs of fresh dill
4 small slices of seeded rye bread
