In the restaurant we buy in some fantastic mushrooms, each with its own character, but they are very very expensive. With regard to mushrooms at home, stay a million miles away from the horrible boring button mushroom and go for the flat field mushroom. These vary in size, so I always buy ones as big as beer-mats. This recipe is absolutely fantastic, juicy and meaty.
Recipe From
1 good handful of fresh thyme, leaves picked
a pinch of dried chilli
2 cloves of garlic, peeled and finely sliced
juice of 1 lemon
6 good lugs of extra virgin olive oil
4–8 flat field mushrooms, depending on size
1 knob of butter
salt and freshly ground black pepper
