Let’s be honest for a minute, there’s nothing better than tearing the sweet meat off a gnarly, sticky rib. Ribs should always be nice and economical to get hold of, and whenever I’ve told people that’s what’s for dinner, they’ve always looked really happy. This method is so simple, but the end result is phenomenally tasty.

Recipe From
1 onion
6 cloves of garlic
1–2 Scotch bonnet chillies
3 fresh bay leaves
1 x 227g tin of pineapple chunks in juice
1½ tablespoons ground cumin
½ tablespoon hot chilli powder
1 tablespoon ground allspice
2 tablespoons dried thyme
2 tablespoons white wine vinegar
2 tablespoons Worcestershire sauce
2 tablespoons English mustard
200ml tomato ketchup
100g brown sugar
12 belly chops, bone in (2.5–3kg)
