About the recipe
This is a variation of the classic Eve’s pudding which uses stewed apples. I love peaches for this pudding, though many fruits can be used, such as rhubarb with almonds or plums on their own. I called it Sheila’s pudding for a bit of a laugh really.
Recipe From
6 ripe peaches or nectarines, halved and destoned
4 heaped teaspoons demerara sugar
1 vanilla pod, scored lengthways, seeds removed
125g unsalted butter, plus extra for greasing
125g self-raising flour, plus extra for dusting
125g caster sugar
2 large eggs
