As well as being super-tasty, jasmine rice is thought to stimulate the production of melatonin, the hormone linked to getting our bodies ready for sleep, making this a great dinner choice.
Recipe From
300g jasmine rice
2 cloves of garlic
1⁄2 a bunch of fresh flat-leaf parsley (15g)
2 leeks
olive oil
1 lime
1 carrot
1 large bulb of fennel (400g)
1 veg or chicken stock cube
1 pinch of saffron
1 x 400g tin of borlotti beans
150g blueberries
1 tablespoon blanched almonds
1 tablespoon shelled pistachios
4 tablespoons natural yoghurt
