I first had this salad in a café in Italy. The presentation was rather dull but the taste was fantastic! The crispness of the raw celery and artichoke works perfectly with the olive oil and the lemon juice. It's really refreshing, and the richness of the Parmesan shavings pulls it all together. Nice!
