150g black rice
1 red onion
2 large lemons
1 lime
1 pomegranate
1 clove of garlic
1 fresh red chilli
½ a cucumber
½ a ripe avocado
1 handful of ripe mixed-colour tomatoes
½ a bunch of fresh coriander (15g)
2 x 120g fillets of super-fresh salmon, skin off and pin-boned, from sustainable sources
