Ingredients

SOUP

1 onion

2 cloves of garlic

1 leek

2 sticks of celery

olive oil

900g frozen peas

1.75 litres organic chicken or veg stock

6 sprigs of fresh mint

extra virgin olive oil

optional: natural yoghurt or crème fraîche

TOASTS

6 slices of seeded wholemeal bread

160g leftover cooked smoked or Jerk ham (see page 44)

1 crunchy eating apple

50g Stilton cheese

20g mature Cheddar cheese

1 tablespoon runny honey

4 sprigs of fresh rosemary
