With a whole kilo of mighty spinach, this dish gives us a massive boost of micronutrients, particularly vitamin K, which our bodies need for good bone health and blood clotting.

2 onions
2 cloves of garlic
2 sticks of celery
2 tablespoons dried porcini mushrooms
2 sprigs of fresh rosemary
olive oil
4 large portobello mushrooms
300g Arborio risotto rice
1.5 litres organic chicken or veg stock
1kg frozen chopped spinach
2 tablespoons blanched hazelnuts
60g Parmesan cheese
1 whole nutmeg, for grating
4 tablespoons natural yoghurt
1 lemon
extra virgin olive oil
