There’s always turkey or chicken leftovers come Chrimbo, and a good chowder is a very comforting way to use them up. Also bigging up handy frozen corn and lovely sweet potatoes, this is guaranteed to be a satisfying, hearty bowlful.
Recipe From
1 leftover turkey carcass, plus up to
300g leftover cooked higher-welfare turkey meat
2 onions
2 carrots
2 large sweet potatoes (350g each)
½ a bunch of fresh flat-leaf parsley (15g)
8 rashers of smoked streaky higher-welfare bacon
optional: higher-welfare turkey dripping
500g frozen sweetcorn
100ml single cream
cayenne pepper
1 handful of matzo or cream crackers
