Taco fillings
Firing up the barbecue for the weekend? Then you need to make these chicken tacos. Juicy chicken is teamed with a tangy, smoky pineapple salsa and smashed avocado, so all your guests need to do is load up their tacos and tuck in!
Let’s kick things off with a recipe from the brilliant Tommi Miers, founder of Mexican street food chain Wahaca. These tacos – filled with tender beef dressed in a fresh lime marinade and served with a smoky, spicy tomato salsa – are utterly irresistible.
Carnitas means ‘little meats’ in Spanish, and are a common filling in tacos. Slow-cooking the duck means the oven does most of the hard work, with just 10 minutes prep, and you’re left with melt-in-the-mouth meat. So good when topped with the quick-pickled red onion.
We love this beautiful dish for packing in three of your 7-a-day. Firm white fish is cooked with veggies until golden, but it's the killer kiwi salsa, with lime and tabasco, that takes this one to the next level – absolutely stunning!
These are a great way to get the kids into fish tacos! Here you make your own fish fingers, which means you can choose the fish you know your family will like, and you can do this in advance, then freeze them until you’re ready. Served with a quick-pickled red cabbage for crunch and zesty sweetcorn, they’re a total treat.
Being a £1 Wonders & Money-Saving Meals recipe, you know this dish is going to be easy on the wallet, plus it only takes 30 minutes to cook – win-win! Pork belly is sliced, seasoned and cooked on the hob, with charred corn being added to the pan to take on all of those tasty juices. Then when it’s all piled into tacos, it’s topped with an apple slaw that gives it a next-level hit of sweet/sour flavour.
This is a great hard-shell taco recipe. The contrast of crispy, rich pork and crackling, crunchy taco and creamy beans, with a hit of pickled onion, is so good. Find a quiet spot and eat messily, but very happily.
Coming from our Cookbook Club favourite Max La Manna, we love this veggie taco option. Charring the lentils and broccoli stems in a pan gives them a beautiful smokiness, which contrasts nicely with the crisp cucumber salsa. Game changer!
Made in the air fryer, we know this taco recipe will be a favourite with lots of you. The sweet potato and beans are roasted with Cajun spices, and are then piled into soft tacos with a fresh watermelon salsa and finished with crumbled feta. The mix of sweet and salty, soft and crunchy is utterly delicious.
For those who want extra toppings!
Cannellini or kidney beans are smashed up with garlic, chilli and coriander to make the tastiest side dish. You can even enjoy it on its own as a main meal, topped with a poached egg – just leave it off for your taco night!
You can never have too much guacamole – and as this one only takes 10 minutes to make, get a batch going for your fiesta! Spiked with cherry tomatoes, red onion, chilli and lime, it’s always a great addition to your taco.

Salsa
Now, for this taco essential, you can go a few ways – the Classic tomato salsa, or perhaps you’d prefer a smoky pineapple salsa, a peppy Easy green chilli salsa, or a crowd-pleasing Corn salsa. Or perhaps just make them all and let your guests choose!
