1.5kg fillet of beef
5cm piece of young, fresh ginger, peeled and very finely sliced
2–3 fresh red or green chillies, deseeded and finely sliced
1 good handful of radishes, finely sliced
1 small handful of fresh coriander stalks, finely sliced lengthways
sesame seed oil
low-salt soy sauce
2 limes
