About the recipe
This was one of the last recipes I wrote for this book – I wanted to add an extra, really exciting salad that bigs up the humble beetroot and treats famously boring lentils right so that they're delicious and really sing. Me and my testing team absolutely love this dish – it's beautiful, tasty and nutritious. I hope you love it too.

Recipe From
250g Puy lentils
1 red onion
3 tablespoons red wine vinegar
3 tablespoons extra virgin olive oil
1 teaspoon English mustard
125g cooked vac-packed beetroot
1 heaped teaspoon jarred grated horseradish
1 large free-range egg
2 tablespoons plain flour
200g cottage cheese
olive oil
1 soft round lettuce
