When time is tight, you can’t beat a clever assembly meal – by pulling together a few key ingredients, you can end up with something utterly delicious and almost effortless. Jamie’s been a big fan of traybakes since The Naked Chef days, so we’ve pulled together his top recipes from over the years. We’ve got next-level vegetarian, fish and meat ideas, plus plenty of budget-friendly recipes, too. Enjoy!
Veg traybakes
Just five ingredients create this fuss-free vegetarian traybake. With gnarly portobello mushrooms, melty cheese and jammy tomatoes, you need this recipe in your midweek meal repertoire.

Command big flavour from humble veg with this no-fuss traybake. You can easily make this vegan, if that’s your thing – simply swap in dairy-free yoghurt and you’re good to go.
Big up budget-friendly root veg in this fun traybake, taken from Jamie’s best-selling book Veg. By using two wooden spoons to hasselback the veg, you’ll end up with something that looks super-impressive, but is actually a doddle to make.
Chicken traybakes
We love this clever chicken traybake from Jamie’s cookbook ONE, which is dedicated to the art of one-pan wonders. By cooking the rice in the same tray, you’ll end up with a really satisfying dinner, but hardly any washing up.
You’ll only have to do 10 minutes of prep for this punchy traybake, so it’s perfect for busy weeknights. Plus, you’ll only need to get hold of five ingredients – not that you’d be able to tell! Dinner, done.
The clue’s in the name here – simply chuck a handful of ingredients into a tray, then sit back and relax while the oven does all the work! You’ll end up with perfectly cooked chicken thighs, caramelised peppers and deliciously sweet tomatoes without much effort at all.
Feel free to swap your favourite curry paste into this easy chicken traybake that embraces shortcut ingredients to deliver big flavour without the fuss. And if you want to go all out, make your own curry paste – it’s easier than you think!
Fish traybakes
Bring a taste of the Mediterranean to your table with this Sicilian-style traybake. With flaky white fish, charred veggies and orange, it’s a thing of beauty! Feel free to mix up the veg depending on what’s in season or what you’ve already got in your fridge – tenderstem broccoli, kale or clanked-up peppers would all be delicious here.
Based on Jamie’s iconic fish-in-a-bag recipes from The Naked Chef, this one-tray wonder couldn’t be easier to put together. By creating a foil parcel, the fish will steam beautifully, plus you’ll have minimal washing up to deal with!
We love all of Jamie’s retro traybake recipes, but this little number is a cracker. Take this as a principle recipe, swapping in your favourite flatfish – Dover sole, plaice or brill all work well.
More meat traybakes
As traybake recipes go, this one is definitely up there, and it’s super flexible. With golden rosemary croutons, baked tomatoes and beans, plus gnarly sausages, it’s a hug in a tray! If you’re after a vegetarian version, simply swap in your favourite veggie sausages.
If you’re feeding a crowd but want to avoid the kitchen faff, this recipe is for you. With just 10 minutes of prep, you can transform five ingredients into the most epic traybake that slowly ticks away for 6 hours, creating the most tasty, pullable meat. Dreamy.
