Ingredients

2 large heads of cauliflower, ideally mixed colours (1.2kg each)

½ a medium pineapple (600g)

olive oil

1 heaped teaspoon each of fennel seeds, black mustard seeds

30g flaked almonds

1 x 400g tin of chickpeas

1 level teaspoon ground turmeric

2 level teaspoons medium curry powder

½ a bunch of fresh coriander (15g)

3cm piece of ginger

1 lemon

2 teaspoons mango chutney

200g natural yoghurt

1 fresh red chilli

4 wholemeal chapattis
