About the recipe
This is a bastardized humous recipe, but no less tasty. I love it best smeared over thin pizza bases (see page 232) cooked on a hot griddle pan until charred, but tortillas are always a quick option.
Recipe From
1 x 400g tin of chickpeas or use 170g/6oz dried ones, soaked and cooked until tender
a good pinch of cumin seeds, pounded
1–2 small dried red chillies, crumbled
1 clove of garlic, peeled and pounded to a paste
juice of 1 lemon
salt and freshly ground black pepper
olive oil
