Ingredients

150g black or brown rice

1 lime

2 x 120g fillets of haddock or white fish, skin on, scaled, scored and pin-boned, from sustainable sources

2cm piece of ginger

1 clove of garlic

1 fresh red chilli

2 spring onions

1 tablespoon low-salt soy sauce

1 tablespoon white wine vinegar

3 ripe cherry tomatoes

2 small bok choi

150g mixed greens, such as sprouting broccoli, asparagus, chard, kale, sugar snap peas
