About the recipe
This is an unusual but absolutely brilliant dish. You’ve got a really homely and delicious, simple tomato soup, and to go alongside it – garlicky meaty mussels topped with crispy breadcrumbs. It’s a great combination, really fun to do, totally affordable, and people just love bouncing from one to the other when you serve it up.

Recipe From
1 small red onion
4 cloves of garlic
olive oil
½ teaspoon fennel seeds
½ teaspoon dried chilli flakes
2 x 400g tins of chopped tomatoes
1kg mussels, washed and debearded
100g stale bread
40g Cheddar cheese
½ a bunch of fresh flat-leaf parsley (15g)
