Ingredients

2 x 120g mackerel fillets, skin on, scaled, scored and pin-boned (ask for the head and bones too), from sustainable sources

cayenne pepper

1 heaped teaspoon fennel seeds

1 heaped teaspoon coriander seeds

2 cloves of garlic

1 sprig of fresh rosemary

1 lemon

500ml really good organic veg stock

1 x 400g tin of plum tomatoes

100g wholewheat couscous

2 small potatoes

2 carrots

200g mussels, scrubbed and debearded, from sustainable sources

½ a bunch of fresh flat-leaf parsley or basil (15g)
