Ingredients

ALMOND, APRICOT & CHOC

100g dark chocolate (70%)

100g dried apricots

100g toasted flaked almonds

100g porridge oats

100g soft pitted dates

1 tablespoon cocoa powder, for dusting

MANGO, CHOCOLATE & VANILLA

100g dried mango

100g desiccated coconut, plus extra for dusting

100g porridge oats

100g soft pitted dates

1 tablespoon vanilla bean paste

Top Tip
  • Switching up the cocoa solids in your dark chocolate will give you different flavour profiles. The darker you go, the more bitter your oaty fridge balls will become. Experiment to find your sweet spot, just be sure to use 70% cocoa solids and above.

Method

  1. For the Almond, apricot & choc combo, snap the chocolate into a food processor, then blitz with everything but the cocoa powder until fine and starting to come together. Divide into 20 and, with clean wet hands, roll into balls. Put the cocoa and balls into a shallow bowl, and gently shake until well coated.
  2. For the Mango, coconut & vanilla, in a food processor, blitz everything with 1 tablespoon of water until fine and starting to come together. Divide into 20 and, with clean wet hands, roll into balls. Put some extra coconut into a shallow bowl, add the balls and gently shake until well coated.
  3. For both versions, pop the balls into the fridge or freezer, ready to enjoy as and when you want one! They’ll last for up to 1 week in the fridge and 3 months in the freezer.
