Colourful sweet peppers are super-high in vitamin C – with much higher levels than a lot of other fruit and veg – meaning this dish is perfect for giving our immune system a nice boost.
Recipe From
2 red onions
2 red peppers
2 yellow peppers
50g pine nuts
olive oil
4 cloves of garlic
1 teaspoon fennel seeds
1⁄2 teaspoon dried red chilli flakes
1⁄2 a cinnamon stick
120g raisins
4 tablespoons balsamic vinegar
2 x 400g tins of plum tomatoes
300g dried wholewheat penne
75g salted ricotta or feta cheese
4 sprigs of fresh basil
