On those days when nothing else will do, this super-quick cheat’s pizzetta will give us that comforting vibe, while using half wholemeal flour means we are upping our fibre intake.
Recipe From
100g wholemeal self-raising flour
100g self-raising flour, plus extra for dusting
6 tablespoons 7-veg tomato sauce
1⁄2 a courgette
1⁄2 x 125g ball of mozzarella cheese
optional: 1 fresh red chilli
1 small bulb of fennel (250g)
50g rocket
1 lemon
extra virgin olive oil
2 slices of prosciutto
1 tablespoon balsamic vinegar
Veggie swap in: lose the prosciutto and simply add a sprinkling of pine nuts under the cheese, so you still get a hit of protein.
