About the recipe
Soft and crunchy waffles, tender BBQ pork and zingy slaw – what a combo. It’s delicious, moreish food and brilliant for using up leftover pork from either the Piri piri pork belly (see page 182 of Save with Jamie) or the Mothership Sunday roast pork (see page 156 of Save with Jamie). I have to be honest, a waffle iron makes all the difference here, but you can get them fairly cheaply online. If you don’t have one, use a griddle pan, cooking two ‘waffles’ at a time, instead.

Recipe From
½ a red onion
1 carrot
¼ of a white cabbage
½ a bunch of fresh mint
1 fresh red chilli
2 tablespoons white wine vinegar
2 tablespoons extra virgin olive oil
20g unsalted butter
1 large free-range egg
1 tablespoon caster sugar
140g self-raising flour
½ teaspoon bicarbonate of soda
185ml semi-skimmed milk
300g higher-welfare leftover cooked pork
4 heaped tablespoons BBQ sauce
optional: leftover pork crackling
