About the recipe
Good stale bread is the hero here – torn up and toasted, it acts like a sponge and sucks up all the incredible flavour from the tomatoes and hot dressing. It’s a get-out-of-jail-free recipe for using leftover bread, helping you to waste less, but if you don’t have any, simply tear up a fresh loaf and bake it for slightly longer. If you shop smart, this recipe is also perfect for using the super ripe, cheap tomatoes you can buy in bulk from markets at the end of the day.

Recipe From
200g quality stale bread
12 black olives, stone in
2 heaped teaspoons baby capers
1kg ripe mixed tomatoes
1 small red onion
1 bunch of fresh basil (30g)
1/2 a clove of garlic
3 tablespoons red or white wine vinegar
5 tablespoons of extra virgin olive oil
2 quality sausages (at least 80% meat)
2 level teaspoons sweet smoked paprika
olive oil
1 heaped teaspoon fennel seeds
2 sprigs of fresh rosemary
300g ripe cherry tomatoes
40g Parmesan cheese
