All the veggies in this colourful salad ensure it’s super-filling and packed with nutrients – both cucumber and lettuce have a high water content and give us a nice hit of vitamin K.
Recipe From
4 thick slices of wholemeal bread (50g each)
150g natural yoghurt
1 bunch of fresh tarragon (30g)
extra virgin olive oil
60g jarred sliced jalapeño chillies
1 x 325g tin of sweetcorn in water
2 large roasted peeled red peppers in brine
1 cucumber
1 iceberg lettuce
6 spring onions
200g grapes
320g leftover poached chicken
40g feta cheese
