Ingredients

200g radishes

2 little gem lettuces

2 sprigs of mint

½ a cucumber

1 orange

2 tablespoons of Bombay mix

Method

  1. On a large board, trim the radishes and the lettuces, pick over the mint leaves, then finely chop it all with the cucumber.
  2. Squeeze over the orange juice and mix together, then season to perfection, tasting and tweaking.
  3. Transfer to a platter, then gently crush the Bombay mix in a pestle and mortar and scatter over the top.
