Ingredients

2 pak choi

1 lime

olive oil

1 tablespoon of crunchy peanut & sesame chilli oil

Top Tip

It’s worth hunting out a really good chilli oil with chunky bits of peanut and sesame seeds, and ideally some garlic, because it delivers so big on flavour and has the power to totally transform your dish.

Method

  1. Quarter the pak choi lengthways, halve the lime, place it all in the air-fryer drawer and toss with a drizzle of olive oil and a pinch of sea salt. Cook for 15 minutes at 180ºC, or until the leaves start to get gnarly and the base softens, shaking halfway.
  2. Transfer to your plates, use tongs to squeeze over the jammy lime juice, and serve drizzled with the crunchy peanut & sesame chilli oil. Great in a noodle salad, or teamed with tofu or prawns.

This recipe is for a 1-drawer air fryer.
