About the recipe

Toad in the hole is obviously a great British institution, but I don't want all the veggies out there to miss out, so this is a super-cute version using whole sweet red onions instead of sausages. It could just as easily use portobello mushrooms or chunks of butternut squash, so get creative. With rich onion gravy on the side, it's happy days!

Ingredients

5 red onions

olive oil

120g plain flour

2 large free-range eggs

100ml semi-skimmed milk

½ a bunch of fresh thyme (15g)

4 fresh bay leaves

optional: 2 tablespoons balsamic vinegar

1 teaspoon English mustard

Worcestershire sauce

1 vegetable stock cube

Top Tip

To take this recipe to another level, I like to poke a nugget of blue cheese into the top of each onion as soon as they come out of the oven – it's heavenly.
