Fuss-free and flavour-packed, this veggie frittata is the perfect dish to have up your sleeve for an easy midweek dinner. For a flavour boost, throw in some chopped parsley leaves with the watercress, spinach & rocket. 

Short on time? Potatoes, cannellini beans and broccoli are combined to form patties, then pan-fried on both sides until golden and crisp. Delicious served with a fried egg and some homemade salsa. Quick, easy and oh-so-good.

3 x 400g tins of cannellini beans

1 x 400g tin of plum tomatoes

1 small jar of smoked paprika

180g Cheddar cheese

12 large free-range eggs

3 x 80g bags of Watercress, spinach & rocket salad
